Cake
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1 1⁄2 cups sugar
- 3⁄4 cup butter, softened
- 4 eggs
- 1 tablespoon vanilla
- 1 cup milk

Frosting
- 3⁄4 cup butter, softened
- 6 cups powdered sugar
- 1⁄8 teaspoon salt
- 1⁄3 cup fat-free half-and-half
- 1 teaspoon vanilla
- 1 tablespoon freshly grated lemon peel or 1 tablespoon orange peel
- 2 tablespoons light corn syrup

Cupcake:
- Preheat oven to 350°F Line cupcake pans with paper liners. Set aside.
- Stir together flour, baking powder and 1/2 teaspoon salt in large bowl. Set aside.
- In a large bowl, beat sugar and 3/4 cup butter at medium speed, scraping bowl occasionally, until creamy.
- Add eggs, one at a time, beating well after each addition.
- Add 1 tablespoon vanilla.
- Reduce speed to low and add flour mixture alternately with milk, beating well after each addition, just until mixed.
- Divide batter evenly among cupcake cups and bake for 23 to 28 minutes or until toothpick inserted near center comes out clean.
- Cool on wire racks 10 minutes and remove cupcakes from pans. Cool completely.

Frosting:
- In a large bowl, beat 3/4 cup butter at medium speed until creamy.
- Gradually add powdered sugar and 1/8 teaspoon salt alternately with half & half and 1 teaspoon vanilla, lemon or orange peel, scraping bowl often, until well mixed.
- Stir in corn syrup.
- Frost cupcakes.

My cupcakes came out a little dry and crumbly, the texture was that of a corn muffin. I thought I may have baked them too long, so I shortened the baking time of my second batch, unfortunately I got the same results. The frosting is nice and thick. I added a little orange extract to bring out the flavor. Also, it started to dry out while I was frosting my cupcakes, so I put it all into a pastry bag.

Canadian girl that loves to cook for herself and for everyone around her!! I always enjoyed cooking but more so since I started taking better care of myself by eating healthier food (I am a Weight Watchers Lifetime member!). I still love my chocolate though!
