Carrot Cake With Hot Glaze

- 2 cups sugar
- 1 1⁄2 cups salad oil
- 2 cups carrots, grated
- 2 cups self-rising flour
- 2 cups pecan pieces
- 4 eggs
- 1 teaspoon ground cinnamon
- 1 dash salt

HOT GLAZE
- 1 cup sugar
- juice of one orange
directions
- Cream 2 cups sugar and oil. Add eggs one at a time. Add carrots, flour and salt and stir. Stir in nuts and bake in 8-inch tube pan for 1 hour and 15 minutes at 350°F
- Hot Glaze: Heat orange juice and 1 cup sugar. Bring to a full boil. Turned baked cake upside down on serving plate, Slowly spoon flilling over top and sides of cake. Repeaat until all glaze has soaked in cake.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
