Enjoy this yummy carrot cake without the dairy.
- 1 cup flour
- 1 cup sugar
- 1⁄2 teaspoon baking powder
- 1 teaspoon cinnamon
- salt, pinch
- 1⁄2 cup oil
- 2 eggs
- 2 cups grated carrots
- Blend all ingredients and mix very well.
- Pour into greased and floured 9 inch baking pan.
- Bake for 25- 30 minutes at 350.

This recipe is absolutely fabulous! Very simple to make and a big hit around the family table!
I don't know what went wrong...but the cake did not bake inside. It was cooked but was too moist and almost gooey. I was very disappointed as this was a very simple recipe. I blended everything as the recipe stated...was I to only blend the wet ingredients? I would LOVE to get this right.
