ingredients
- 14.79 ml olive oil
- 4.92 ml butter
- 1814.36 g chicken (about 6 pieces, breasts, thighs, your choice)
- 226.79 g fresh mushrooms
- 118.29 ml celery (diced)
- 3 carrots (cut into large bite sized pieces)
- 1 medium onion (coarsely chopped)
- 1 bell pepper (chopped)
- 1 jalapeno pepper (sliced in rings) (optional)
- 946.0 ml tomatoes
- 14.79 ml basil (dried, crushed)
- 4.92 ml oregano (dried, crushed)
- 1.23 ml savory
- 1.23 ml pepper (to taste, freshly ground)
- 1.23 ml salt (to taste)
directions
- Sauté chicken in olive oil and butter in sauce pan until golden.
- Place in baking dish.
- Add mushrooms, celery, carrots, onion, and peppers to pan and sauté those until golden, about 5 to 10 minutes.
- Add tomatoes and simmer another 5 minutes.
- Add spices and stir.
- Pour over chicken in baking dish.
- Bake uncovered for 20 to 30 minutes.
