    This is the caramel sauce my family use to fill small pastry cases. The final step of beating the caramel well is very important - the caramel should become light brown in colour

    Directions:

      In a saucepan, mix together the flour and sugar until well blended.
    2. 2
      Chop the butter into small pieces.
    3. 3
      Add a little of the milk to the flour and sugar and mix well until smooth and then add the rest of the ingredients.

      Stir over a medium heat and when mixture starts to thicken, remove from heat and beat well with electric mixer.

      Mixture will thicken more when cool.
