My son (who's half Mexican) loves this---but didn't know what he's been doing this last year is basically Dulce De Leche,lol....but the question he now has is : How long can the can sit in the cabinet unopened after cooking/heating? And what about the "best by" date on condensed milk/creamer , can it be good after and how long ,years?

How long will the unopened can last AFTER the initial 3-4 hour water boiling? I have made this before and it was amazing bc I let it simmer for 4 hours and let it sit in the hot water until it was cooled, but we used it the next day. It is very thick after the extra long boil and it’s darker and richer tasting, It is time consuming however especially when prepping for other holiday desserts and I will need to make about 3-4 cans at a time. Thank you for posting your recipes they are awesome!!

I have been making caramel this way for about 10 years now. I simmer mine for about 3 1/2 hours making sure they are always covered with water and adding more water as needed. You can boil as many cans as you like and keep on hand. I make a cake filling with the caramel and chopped pecans....heavenly.
