Directions

  1. Heat oven to 375*.
  2. Put paper liners in 18 muffin cups.
  3. Place a vanilla wafer in each cup.
  4. Beat cream cheese, eggs and sugar until smooth.
  5. Add vanilla and mix well.
  6. Fill muffin cups 3/4 full.
  7. Bake for 20 minutes.
  8. Cool and drizzle caramel on top.

Ooh... easy little cheesecakes! These are a fantastic treat. They bake up quickly and look very impressive. I loved this as is, but might try different flavor extracts next time; I think that orange extract or almond extract would be fabulous with the creamy cheese and caramel! Thanks for this great recipe.

I made these for a Mother's Day get together we are having tomorrow. I am rating them already as my husband asked if he could sample them and I gave him one. He had a look of food ecstasy on his face as he ate it and immediately begged for another one. He said he would eat all of them if I would let him. Thanks for an easy and (I assume) tasty recipe!!

These little cheese tarts make up in a jiffy and have a nice flavor. I thought the caramel topping added a nicely different taste. For flavor and ease of preparation..5 stars. The texture rated 4.5 stars, but I will make again. Thanks.
