  • Heat oven to 375*.
  • Put paper liners in 18 muffin cups.
  • Place a vanilla wafer in each cup.
  • Beat cream cheese, eggs and sugar until smooth.
  • Add vanilla and mix well.
  • Fill muffin cups 3/4 full.
  • Bake for 20 minutes.
  • Cool and drizzle caramel on top.

  1. Ooh... easy little cheesecakes! These are a fantastic treat. They bake up quickly and look very impressive. I loved this as is, but might try different flavor extracts next time; I think that orange extract or almond extract would be fabulous with the creamy cheese and caramel! Thanks for this great recipe.
     
  2. I made these for a Mother's Day get together we are having tomorrow. I am rating them already as my husband asked if he could sample them and I gave him one. He had a look of food ecstasy on his face as he ate it and immediately begged for another one. He said he would eat all of them if I would let him. Thanks for an easy and (I assume) tasty recipe!!
     
  3. These little cheese tarts make up in a jiffy and have a nice flavor. I thought the caramel topping added a nicely different taste. For flavor and ease of preparation..5 stars. The texture rated 4.5 stars, but I will make again. Thanks.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
