ingredients
- 1 lb dried lima beans
- 2 quarts water
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 cup margarine
directions
- Soak the beans overnight in the water, or bring them to a boil, cover them and let them soak for an hour in the boiling water. After soaking, simmer the beans for about an hour, or until they are almost tender. Add the salt, pepper and margarine. Simmer the beans for another half hour or so, cooking until they are tender, but not mushy, and the broth is somewhat thickened.

I think I prefer the overnight method much better. The beans seam to soften better. I've used both methods. The boil and let soak then simmer does work. I dont know if its me or what but the last few years the beans I've gotten dried seems to be rock solid and take forever to soften. They were good just took alittle more time than I expected.
