- Preheat oven to 375°F
- Cream Butter.
- Mix in sugar.
- Beat the egg.
- Add the egg to the mixture. Combine thoroughly.
- Add the vanilla and grated lemon rind.
- Drop in the pinch of salt.
- Sift flour.
- Add the flour and mix thoroughly until creamy.
- Grease a cookie sheet even if it is nonstick.
- Bake until the edges brown nicely. Maximum time is 10 minutes. Check the cookies at eight minutes and take them out when they're brown on the edges to your liking.
