Broiled Steaks

- 4 tablespoons unsalted butter, softened
- 1 teaspoon fresh thyme, minced
- 1 teaspoon Dijon mustard
- salt and pepper, to taste
- 4 4 strips rib eye steaks or 4 strips beef tenderloin steaks, 1-2 inches thick, trimmed
- 2 cups salt

- You will also need 1 (13x9 inch) disposable aluminum roasting pan, 3 inches deep.
- Adjust oven racks to upper-middle and lower-middle positions; heat oven to 275 degrees. Beat butter, thyme, mustard, 1/4 tsp salt, & 1/4 tsp pepper in bowl, refrigerate.
- Spread 2 cups salt over bottom of aluminum pan. Pat steaks dry with paper towels, season with salt and pepper, and trasfer to wire rack. set rack over aluminum pan and transfer to lower oven rack. Cook 6-10 minutes, then remove pan from oven. Flip steaks, pat dry with paper towels, and let rest 10 minutes.
- Heat broiler. Transfer pan to upper rack and broil steaks, flipping every 2-4 minutes, until meat registers 120-125 degrees (fro medium-rare), 6-16 minutes, depending on thickness of steaks. Transfer steaks to platter, top with reserved butter mixture, and tent with foil. Let rest for 5 minutes. Serve.
