Broiled Sole Parmesan

  • Heat broiler.
  • In medium bowl, stir together all ingredients except fish and lemon juice.
  • Place sole fillets on broiler pan; sprinkle with lemon juice.
  • Broil 3-4 inches from heat until fish flakes with a fork (about 3-5 minutes).
  • Spread Parmesan mixture over fillets and broil until bubbly and golden brown (3-5 minutes).

  1. I thought I had reviewed this ages ago, but here we go. This is a fabulously easy recipe! After the first time I made it I cut out the butter entirely. I use fresh parm, sometimes I use the onion sometimes not and I've been known to add garlic powder and a dash of hot sauce in place of the cayenne. The fresh lemon juice and zest are the perfect foil for the richness of the mayo/cheese. I've given up trying to turn the fish, the sole I buy at Costco is so thin I broil for about 2 minutes add the topping and broil about 2 more. I wanted to add some texture to the dish so I sprinkle crushed croutons over the topping before broiling. I recently made this with rock fish and it was great, there's more substance to the fish so the topping doesn't overwhelm it (this one I turned).
     
  2. I made this using what I had at home, so I substituted equal parts mandarin zest for lemon zest and shallot for green onions. It was easy to make and delicious!
     
  3. Easy, fast and delicious! My husband usually chooses this recipe whenever we've got sole in the freezer. He uses Smart Balance instead of butter, and if we're out of fresh ingredients, bottled lemon juice (no zest) and canned parmesan.

They depend on you! ('Nuff said!). <br> <br>June 2003 Update: I now work part-time as a vet tech and part-time as an ER ward clerk at a local hospital. After being a technician for 20 years, the emotional stress was getting too hard to handle. Putting an older pet to sleep after I'd watched them grow up over the years was something I could no longer do. I decided to look for a new job while I was still 40-something rather than wait 4 years when I was 50-something! Working with animals is in my blood however, so I could not give it up entirely.
