Quick and easy. From "Fish Cookery"
- 3 -4 red snapper fillets
- 1⁄4 cup Roquefort cheese or 1⁄4 cup blue cheese
- 1⁄4 cup butter
- 2 tablespoons sherry wine (optional)
- Cream Roquefort, butter and sherry.
- Spread on fillets and broil until done or fish flakes easily with a fork.
