Broccoli Macaroni Salad

"This salad was a big hit at a church function I attended. The lady who brought it told me basically what she had done, and I quickly bought the ingredients and fixed the salad myself the next day so I could jot it down and share with you all. Cook time is for cooking the pasta - also allow cooling time for the pasta (at least 30 minutes). Once assembled, the salad neds to chill as well - at least 1 hour before serving."

  • In a large bowl, combine noodles, veggies, raisins, and sunflower seeds.
  • In a small bowl, combine mayonnaise, Miracle Whip, vinegar, and sugar well.
  • Pour dressing over salad and mix well.
  • Season with salt and pepper to taste.
  • Chill for at least 1 hour before serving in a covered bowl.
  • Stir again before serving and adjust seasonings if needed.
  • If too dry, add a an extra spoonful of may or Miracle Whip if desired.

  4. Thank you Heather for posting this recipe. I prepared it for Easter and it was a big hit. I used the 2 1/2 cups of broccoli, raisins, and 1/3 cup plus the 1/2 cup using the Miracle Whip. The end product was just right not to dry or not to over powering with Miracle Whip. Next time I want to make this with the sultanas in it.
     
  5. I have never had a broccoli salad with pasta. The combo was very nice. The taste reminded me of the broccoli salad they have at Sweet Tomatoes. The only changes I made was to substitute shredded carrots for red bell pepper as I did not have any. Next time if I have the peppers I will still add the carrots for extra nutrition. I left out the celery and also halved the amount of sugar. It was plenty sweet enough for me. Thanks Heather
