Broccoli, Bacon and Cheese Salad

"This is a delicious summer salad, however I make any time of the year. It is always a big hit with family, friends and at church functions. We love it. It is easily made as a lowfat version, using low fat cheese and low fat mayo, even can use Splenda instead of sugar. Serving size is 1/2 cup. I obtained this recipe from Pillsbury Simple Summer Recipes Cookbook in approximately 1990. This is my first post to Recipe Zaar. I really hope you enjoy it."

  • Mix up your dressing ingredients and set aside.
  • Mix all the dry salad ingredients (not the bacon) in a large salad bowl.
  • Pour the dressing over the other salad ingredients, mix well.
  • Mix in the bacon just before serving the salad.

  1. What an easy dish to throw together...hubby wasn't happy when he heard we were having raw broccoli...but...he loved it!...I was out of red onion so used sweet onion instead...otherwise made as posted...this is a keeper...it's great for the hot summer months...thanks for posting it! =)

  4. I made this for a quick dinner last night. Veggies and protein so why not. It was delicious. This is my new summer salad!! I made it exactly as you said and I wouldn't change a thing. I used mayo, like you said instead of a dressing because I wanted a new flavor and this was great. Thank you for posting.
     
  5. Quite good! Broccoli salad is my downfall, I really could eat the entire bowl by myself. The recipe I usually make has sunflower seeds instead of cheese but I really enjoyed this version. While anything with bacon just has to be good, this dish has a nice blend of flavors and textures, is very attractive and colorful. Also, not too heavy on the dressing. This would be a good potluck recipe, just make a huge batch cause it will disappear fast. Another tip, if you're so inclined, the raisins can be steamed a bit; personally, I like this just the way it is. Thanks so much, Bobtail!!

  3. Very good! I love broccoli salad. This was different as I used lemon juice instead of cider vinegar. I always use artificial bacon bits. I enjoyed the taste of the red onions too. Thanks for posting this recipe! ;)
