When I became diabetic, I needed to work out a satisfying breakfast that wouldn't tax my blood sugar. Follow the smoothie with one piece of whole-grain bread and 1 tbs reduced fat, natural style peanut butter (I use Smucker's). You can't go wrong.

  1. Add all ingredients to a blender and blend until smooth.
  2. Experiment with yougurt-berry combinations. I use mixed berries, blueberries, or rasberries regularly. I also mix up the yougurt flavors to keep from getting boring.
  3. This is also great with the following substitutions.
  4. * 1/2 teaspoon almond extract for the vanilla.
  5. * 8 ounces frozen peaches for the berries.

  8. 2 fruit.
  9. 1 fat.
  10. 1 carbohydrate.

At first I thought this had too much lemon juice in it, but it "grew" on me and tasted just fine. I used raspberries and blackberries. Good way to get your flax oil. Made for Fall 2008 PAC.
