This is a nice replacement for rice and potato. This is one recipe I take when we travel and are staying in condos.

  1. Saute the veggies for 5 minutes. Add lentils and stir one minute.
  2. Add stock and bring to a boil. Reduce and cook for 35 minutes. Add salt and pepper for seasoning.

This was a little bland but okay and better with a little sour cream and salt. It makes a whole lot. Twice when I've made this (out of, say, 5 times), I needed more water (1.5 cups) and longer cooking time because the lentils were still a little crunchy.
