      Preheat oven to 350 degrees.

      Grease a loaf pan.

      Beat shortening in mixing bowl until soft.

      Blend in sugar thoroughly.

      Add egg and beat well.

      Stir in coconut.

      Alternately add mashed bananas and sifted dry ingredients.

      Turn batter into loaf pan.

      Bake 1 hour and 18 minutes.
