  • 2 medium beets, minced
  • 12 cup onion, chopped
  • 23 cup roasted pumpkin seeds, chopped
  • 12 cup gluten free breadcrumbs
  • 2 tablespoons parmesan cheese, grated
  • 14 cup cheddar cheese, shredded
  • 1 12 tablespoons coconut flour
  • 18 cup avocado oil
  • 1 egg
  • 1 teaspoon italian seasoning

directions

  • Peel and mince beets.
  • Finely chop onions and pumpkin seeds.
  • Add all ingredients together.
  • Form into 12 patties.
  • Bake in oven at 350 degrees 20 minutes or until patty is done, turning once.

I like to eat healthy foods and most especially vegetables and seafood. In the past, with four kids and a working mother, I had explored many family-friendly easier to prepare recipes.
