Beef Barley Soup

"A very hearty soup that makes a great warm supper at the end of a cold day. If you want a lighter fare, try substituting ground chicken or turkey. If you are not abig fan of lentils and split peas, use 3/4 of barley only."

  • In a large stockpot, combine water, tomato sauce, dried soup mix, bouillon cube, carrot, potato, celery and seasonings; bring to a boil. Reduce heat and simmer, covered for about 1 hout. Add beef. Cook for 30 minutes longer.
