This was my favorite quick thing to eat growing up.
- 16 -32 ounces refried beans (1-2 cans)
- 12 -24 ounces Old El Paso mild enchilada sauce, 1-2 cans
- 1 -4 flour tortilla
- four-cheese Mexican blend cheese
- onion (optional)
- Set oven to 350.
- Take a flour tortilla and put beans down the center with some cheese on it roll it up put on a plate and pour enchilada sauce on top then top with some more cheese and place in the oven until bubbly. I usually do one burrito per plate take it out of the oven and top with onions.
It needed the onions for texture, but otherwise it was very easy and tasty.
This is how I make mine. So easy and tastes soo good. Sometimes I add green chile to my beans.
I wanted an easy to make bean burrito but a little more like you'd get in a restaurant as enchilada style. This was simple to make and was very good. I waited to pour the enchilada sauce on top until the burrito became slightly crispy in the oven (but did put a layer on the bottom to prevent sticking and burning). Then added the enchilada sauce on top and cooked until just bubbly. That gave the burrito a nice texture like you'd get in a restaurant. Thanks a bunch for posting this keeper easy recipe! Cooking a great tasting meal doesn't always have to be complicated.
