I love mushrooms and this recipe from Super Food Ideas looks really good and fresh - just the thing for the summer barbecue.

I took the basics of this recipe and cooked the mushrooms in a bit different way. I chopped them up finely and roasted with the herbs and butter (not oil) in a pan and served over baquette slices. The flavours were just yummy.

  1. Preheat a barbecue chargrill on medium high heat.
  2. Combine oil, garlic, thyme and rosemary in a bowl and season with salt and pepper and then brush mushrooms with olive mixture.
  3. Barbecue mushrooms for 6 to 8 minutes, turning halfway during cooking, or until charred and just tender and then transfer to a serving plate and serve with lemon wedges.
