Banana Nut Yeast Bread (Bread Machine)

"Something different - banana yeast bread with a hint of cinnamon and toasted chopped walnuts. Bake time is per bread machine. Really easy in your bread machine or you can make it the conventional way. Fabulous!"

  • Spread walnuts in a single layer on a baking pan and bake at 350° for 5 to 10 minutes or til light brown.
  • Watch carefully and stir once or twice.
  • Add ingredients to bread machine according to manufacturer's direction, adding the banana with the milk.
  • Use regular or white setting.

  1. I omitted the walnuts and added about 1/3 cup of freshly ground flax seeds for nutritional value, and it was wonderful. I also increased the yeast to 2 1/4 tsp, which is what I typically use for a loaf of this size. Maybe the small amount of yeast is the reason for the poor results some have had.

  4. Very good bread. I filled with cinnamon sugar and nuts. I wasn't sure about the baking time and wound up burning them.. but the inside was fine. I'll lower the temp to 350 or 325 next time. I first made the dough in the machine, then rolled out and filled and put into 3 mini loaf pans. I let them rise for one hour and baked at 375 for 36 minutes.
     
  5. I loved this recipe, though I did make a few changes and found the slight banana flavor and not to sweet flavor perfect for those changes. Made in the ABM in the dough cycle (I always prefer to bake myself) and added flax for the nutritional boost. When ready divided the dough and froze half for later, rolled the dough out and added a cinnamon filling and then rolled up and allowed to rise until doubled. After baking removed and added a vanilla glaze. It turned out perfection and my family raved over it. This is a great recipe and I found the slight hint of banana perfect.

Using coconut milk,<br/> and shredded coconut in place of the walnuts,<br/> also brown sugar instead of white<br/>2 tbsp flaxseed meal<br/>1tbsp almond flour<br/>white bread with light crust <br/>2 lbs settings (after reading it should have been 1.5)<br/><br/>the crust is tough<br/>the bottom of the loaf mushy<br/>not sweet, more simple sandwhich bread or roll bread<br/>blew up and sunk back in on top<br/><br/>the flavor is mild and the bread is thick<br/>it is scrumptous <br/>and smells great<br/><br/>just expected more. more of a light and fluffy with a nice soft crust and banana-y flavor
     
  2. I never thought I'd find a banana bread bread machine recipe. This is a great tasting bread. It's great with honey cream cheese on it. YUMMY!!! I used pecans instead of walnuts. Thanks for posting this recipe. It's a keeper!!!!
