Boozy Banana Bread Pudding

"A nice alternative to traditional bread pudding. I'm not a huge fan of bread pudding but this was good. I think that coconut rum would be wonderful in this dish."

  • Cut the bread into cubes, place in a bowl and pour the milk on it, put aside for an hour.
  • Preheat oven to 325 degrees F.
  • Grease 9 x 13 inch baking dish.
  • In a separate bowl mix the eggs, sugar and vanilla essence.
  • Pour this mixture onto the bread mixture.
  • Next add the mashed bananas and raisins.
  • Now add the rum, cinnamom and ground nutmeg.
  • Pour this mixture into the prepared baking dish and bake in the oven for 1 hour.
  • Let cool before serving.

  1. What I like is that this is not completely dead sweet. Rum makes it better. I had a bit of brown sugar frosting in the fridge, so I thinned it with rum and put it over the top!
     
  2. Since the kids wanted ice cream, this was a good excuse to whip this up for the DS, and the neighbor nent door. I did use 2% fat-free milk, and cut the raisins down to 3/4 cup- thats what I had on hand though. Boy was this ever good, and flavor filled. Outstanding flavors, as we enjoyed this. Have 2 pieces left over tommorow, see who gets to the fridge first. Definate keeper here. Made for Holiday Tag.
     
  3. This is a solid (but not too solid), firm (but not too firm) super-tasty and banana-full bread pudding. The raisins give it a nice chew. I bet adding chopped walnuts or pecans would be nice too. Because we are a small family, I cut the recipe in half (using 2 eggs). And because all I had was 2% milk and a shelf-stable container of whipping cream, I used equal parts of those. I served it cooled but still warm with a pour of milk. Delicious! Half the recipe filled a 1 1/2 quart baking dish and would easily serve 6-8 for dessert!
