  • Preheat oven to 350 degrees. Grease and flour a loaf pan.
  • In a large bowl mix flour, sugar, salt, baking powder, and oats.
  • In a medium bowl, mash the bananas. Beat in the eggs and oil. Add to dry ingredients and mix to combine. Fold in nuts and blueberries.
  • Pour batter into the prepared loaf pan. Bake at 350 degrees for 1 hour. Cool in the pan for about 10 minutes, then remove and cool on a wire rack.

  1. Delicious Bread. I had some ripe bananas to use and this recipe was just the right fit. I love the addition of the blueberries and oatmeal. The only change I made was to use half brown and half white sugar, and also added flax seed meal.. Thank you loof another winner.
     
  2. Made this during my Christmas baking. Added nearly 2 cups of blueberries and huge chunks of walnuts, certainly more than was called for. I also added a dash of cinnamon and nutmeg because I like a spiced loaf. I finished up by adding a butter/flour/sugar crumble to the top. Hearty loaf. I sliced off a 2" slab and called it breakfast. Will be making again. Totally owns 5 stars.
     
  3. This is a very good banana bread recipe. I used half whole wheat flower and a mix of nuts. It's like a cross between a breakfast bar and banana bread. I'll make this one again and again.

  5. Very good bread. We used 1/2 white and half whole wheat flour and skipped the walnuts. We used a small loaf pan and also a mini loaf pan (for the freezer). Thanks for sharing!

  2. Used 1/2 cup while flour, 1/2 cup whole wheat flour, 1/2 cup almond flour instead of 1 1/2 cups white flour, Used 1/4 oil and the rest almond milk to reduce fat Used 1/4 truvia baking blend to reduce sugar Tasted great!

  4. Oh So Yummy! I used an 8x4 glass loaf pan and baked on convection @325f. This gave me a beautiful loaf that I taste tested with a cuppa Earl Grey. The blueberries went in still frozen and they are a grand addition. Instead of the walnuts I had just the right amount of pecans so I used the last of them. Thanks for a lovely treat loof. :D
