- 473.18 ml flour
- 4.92 ml baking powder
- 2.46 ml baking soda
- 2.46 ml salt
- 1.23 ml coriander seed, ground up
- 1.23 ml allspice
- 1.23 ml cinnamon
- 354.88 ml mashed bananas
- 591.47 ml apples, chopped
- 44.37 ml canola oil
- 236.59 ml water
- 78.78 ml brown sugar, packed
- 14.79 ml flour
- 1.23 ml cinnamon
- 1.23 ml allspice
- 14.79 ml vegan margarine
directions
- Preheat oven at 350°F.
- Mix flour, baking powder and soda, salt and spices.
- In a separate bowl mix sugar, banana and oil.
- Add apples to flour mixture and ensure they are well coated.
- Stir in the sugar mix and then the water, mix well.
- Spoon into well greased muffin pan.
- *If adding the topping: mix sugar, flour and spices then cut in the margarine until crumbly – spoon a small amount on top of each muffin.
- Bake for 25 minutes.
