This is great if you need to feed an army on the cheap! Serve with a salad and garlic bread, sure to be a pleaser!
- 2 (10 ounce) packages frozen chopped spinach
- 3 eggs, beaten
- 15 ounces ricotta cheese
- 1⁄4 teaspoon pepper
- 2⁄3 cup grated parmesan cheese
- 16 ounces ziti pasta, pasta-cooked
- 27 1⁄2 ounces pasta sauce
- 2 teaspoons oregano
- 12 ounces shredded mozzarella cheese
- Cook spinach as package directs, drain, cool and squeeze out well.
- Add eggs, ricotta cheese, parm. cheese, and pepper. Mix well and set aside.
- Combine cooked ziti with sauce and oregano. Place 1/2 ziti miture in lightly greased 13X9 baking dish, layered with cheese and spinach mixture. Add remaining ziti.
- Cover with tin foil and bake at 375 degrees for 25 minute or until bubbly.
Absolutely delicious. Cook as directed but add garlic and olive oil to the ziti and pasta sauce mixture and top off the dish with a heavy dose of mozzarella cheese before baking.
I made this baked ziti and was super disappointed. There's too much spinach in there. Also it doesn't tell you what to do with the mozzarella, and I forgot about it and had to interrupt the cooking time to sprinkle it on. I think removing the tin foil towards the end would be a good idea, so it might brown on top. Basically though, it just tasted not good. I added salt, which helped a bit. I'm sure there are better spinach baked ziti recipes out there. I wish I would have picked on before I spent the effort on this one.
I had originally planned a crockpot dish for tonight using spinach and ricotta but realized too late that I was out of milk, so I searched and found this recipe. I loved it! It took me less than an hour to make (start to finish) and I love that it incorporates veggies. Next time I may try adding meat, as other reviewers have suggested to make it a complete one-dish meal.
The only change I made to the recipe was that I used one box of spinach, and I had thawed it so instead of cooking and cooling it before mixing it with the ricotta, I mixed the thawed spinach as is. I think if I had added the second box of spinach, the kids may have refused to eat it altogether. One liked it and the other, not so much. The only other comment I have on this recipe is that I think the final part of step 3 is missing, which is to sprinkle the mozzarella cheese over the top after the last layer of ziti. I then covered with foil for 15 min and removed it for the last 10 min. I'll definitely be making this again.
