This is great dish -- much like a sweet potato casserole but not quite as sweet. Got it from a member of monthly book club.

  1. Melt 1/2 stick margarine in casserole or souffle dish.
  2. Beat eggs.
  3. Add pumpkin, sugar, vanilla, salt, cinnamon, flour, and evaporated milk to beaten eggs.
  4. Mix well.
  5. Pour into casserole dish.
  6. Mix 1/4 cup sugar and 1/8 tsp cinnamon.
  7. Sprinkle over top.
  8. Bake at 450 for 25-30 minutes or until set.
