Baked Apple Pancakes

"Why not treat your family to these easy to make, out of the ordinary pancakes. They taste so good on a cold morning. You can top this dish with vanilla whipped cream instead of the maple syrup...or use both!"

  • Preheat oven to 375 degreed F.
  • Melt butter in an 8 inch oven proof skillet or casserole.
  • Saute apples in the butter.
  • Sprinkle with sugar and cinnamon, cooking until the sugar is melted and the apples have begun to soften.
  • Mix together eggs, flour and milk in a medium sized bowl.
  • Pour over the apples.
  • Bake for 20-30 minutes or until puffed and done in the center.
  • Serve warm with maple syrup.

  1. A unique tasty pancake for a Sunday morning breakfast! Scaling the recipe in half, it was cooked in 20 minutes. I used extra cinnamon, added some nutmeg & served with Canadian maple syrup. Next time, I'll omit the sugar. Thanx Geema!
     
  2. I love this recipe because it's easy to make, doesn't take a lot of prep time, and tastes great! To make it more healthy I did not use butter, but instead put some lite syrup (just enough to cover the bottom of the pan) on the bottom of my 9 X 13 glass pan after spraying it with pam. I used 1/2 cup of white and 1/2 cup of wheat flour, and then added about 1 cup of 1% cottage cheese along with 1 cup of Chobani low fat vanilla yogurt and 2 tsp. of vanilla. I used red delicious apples because that's all I had, and cut the sugar to1 tsp. My goal was to add more protein. It turned out great! I also added 2 tsp of vanilla to the batter, and a pinch of nutmeg to the apples.
     
  3. I'll definitely make this again...but, cut down the sugar - tasted more like a dessert than a breakfast. definitely didn't need any syrup. So easy and yummy - next time I'll double it to have more leftover to reheat :-)
     
  4. My whole family liked this recipe a lot, and I will surely be making this easy recipe again. Based on other reviews, I used only 1/4 cup of sugar and added extra cinnamon. Instead of white flour, I used a mix of whole grains I usually make pancakes out of. I baked it 20 min. in a 10" cast iron pan. One note I would have found helpful: With all the eggs, this will be custardy, so the batter will be thin compared to pancake batter. Mine puffed some around the edges, but not really much in the center, so I almost overbaked, but fortunately I did check, and the center was quite firm, so be careful not to overbake. Also, when we ate it, it was sort of layered, with apples on the bottom, custard in the middle, and pancake-bread on top. I am not sure if this would happen also with white flour, but it was all yummy! I might try this with brown sugar next time.
     
  5. We loved this pancake! I used 6 jonathon apples, a bit more cinnamon and also added a little fresh ground nutmeg. Baked for 30 minutes, topped with warm syrup, and we had a wonderful breakfast this morning! Thank you so much Geema for posting this recipe!!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
