Bad for Hips, Good for Lips Blueberry Coffee Cake

"Oh, we all have one...the recipe that everyone asks for? My family loves this, not sure where it came from. Don't skimp on the good stuff, just cut yourself a smaller piece and there's more to share! I doubt you'll want to give it away though!"

  • Cream together first 5 ingredients.
  • Add Egg and lemon juice, and stir to incorporate.
  • Mix in baking powder and salt with 1 cup of flour.
  • Add cream, milk and remaining 1/2 cup of flour.
  • You'll have a very thick batter. Fold in blueberries.
  • grease up a 9x9 pan and then put a square of parchment paper in the bottom of the pan. c'mon you'd hate for this to fall apart right before that important brunch, wouldn't you? Grease the parchment paper too -- i know it sounds silly but it works.
  • mix up the topping ingredients and sprinkle evenly on top.
  • 350 in the oven for 35-40 min
  • Cool in pan and invert onto plate, peel off the parchment paper -- then invert onto another plate :).

Hrm...based on the ideas given... I live in England. But I was raised in Georgia, USA. Yes yes, a southern girl through and through. I'm a student in a serious relationship with a brit. I'm a student studying English Literature and History, loving every minute I might add. My favorite cook book is anything by Jamie Oliver or Gordon Ramsey, I just think they're grand! And it's written in a clear way. My biggest pet peeve will always be rudeness. I'm southern--there is never, ever an excuse for bad manners.
