Bacon and Onion Potato Casserole

"A friend invited me to a collaborative dinner and said my task was to bring a cool potato dish. This one fit the bill and was easy to transport!"

  • Peel and boil potatoes.
  • While potatoes cook, cook bacon until well done and crisp.
  • Drain and crumble bacon, set aside.
  • Dice onion and carmelize in melted butter, set aside.
  • When potatoes test done, drain and mash.
  • Stir in heavy cream and whip.
  • Season with salt and pepper to taste.
  • Fold in onions, bacon and parmesan cheese.
  • Add additional cream if you prefer softer potatoes.
  • Turn into a greased casserole dish.
  • Bake for 30 minutes in a preheated 350 degree oven.
  • Sprinkle with additional parmesan before serving.

Hello there. I live in Central Michigan where I work in the automotive industry. I've been cooking for as long as I can remember, enjoying baking as a kid but finding more pleasure in savory than sweet these days! Years ago there was a shortening called Fluffo. To this day, their cookbook (a little spiral bound edition) is among my favorites. I also have a very old BH&G book that I use frequently. Along with cooking and entertaining friends and family, I love to read mystery novels. I like to travel and have been to Europe a few times. Until recently, I worked alot in Mexico. I love to do home decorating projects, enjoy a good hockey game and love to shoot pool.
