Backwoods Spinach Salad

ingredients
- 1⁄2 cup wild rice, uncooked
- 8 slices bacon, cut into 1/2inch pieces
- 4 cups spinach leaves, torn
- 1 cup fresh mushrooms, sliced
- 1 cup radish, sliced
- 1⁄4 cup cider vinegar
- 2 tablespoons honey
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
directions
- cook wild rice according to package directions.
- in a 10"in skillet cook bacon over medium heat, until browned.
- reserve 2 tablespoons of bacon fat, and discard the rest.
- in same skillet add vinegar, salt, pepper, honey, and reserved bacon fat.
- cook over medium heat stirring occasionally until heated through, about 3 to 4 minutes.
- in large bowl combine remaining ingredients.
- pour warm dressing over salad, toss to coat and serve.
