- 1 (12 ounce) box tri color rotini noodles
- 1 dry ranch dressing mix, pack
- 1 cup mayonnaise
- 1 cup sour cream
- 1⁄2 cup red onion, diced
- 1 large cucumber, peeled, seeded and diced
- 1⁄4 cup chopped fresh parsley
- 1⁄2 teaspoon celery salt
- 1⁄2 teaspoon black pepper
- 1 cup chopped ham (optional)
- 1⁄2 cup frozen peas (optional)
directions
- Boil the noodles according to packaging instructions (or until al dente.).
- Drain and rinse with cold water. Set aside.
- In a large bowl mix the dry ranch packet, mayo, sour cream and parsley.
- Gently fold in the onion, cucumber, ham, peas and noodles until coated.
- Season with celery salt and black pepper to taste.
- You can interchange the optional ingredients to your liking. I have used this recipe with chopped chicken or even a firm fish like tuna or salmon. You can also keep it vegetarian by adding an array of your favorite veggies. I think it's great with some cold blanched asparagus! I hope you enjoy this recipe!
