A new twist on muffins (with cheese!)

Very light and tasty! DH said he couldn't taste the pepperoni, so I may add a little extra next time. I used fat free milk and turkey pepperoni, so that may be why the pepperoni taste wasn't more prominent. The cheese was great, I love asiago! They turned a beautiful golden brown in the time stated. Thanks for sharing!

  1. Preheat oven to 375°F Grease twelve 2 1/2-inch-diameter muffin cups.
  2. Stir together flour, baking powder, salt and sugar in large bowl. Beat together egg, milk and melted butter in small bowl and pour over flour mixture. Stir to combine, but do not beat. Stir in cheese and pepperoni (if using).
  3. Spoon batter into muffin tins, filling about 3/4 full. Bake 25 minutes or until muffins are high and golden. Remove to wire rack. Serve warm.
