I got this recipe off of the back of a can of Del Monte tomatoes. It's a real quick dish that can be made in less than 30 minutes.

  1. Dice chicken into 1/2 inch chunks.
  2. Combine chicken, undrained tomatoes, and chili powder in a mdeium saucepan.
  3. Cook over medium heat, about 5 minutes or until chicken is done and sauce is slightly thickened.
  4. Add remaining ingredients and simmer 5 to 7 minutes or until heated through.
  5. Garnish with shredded cheese, diced avocados, radishes, or green onions, if desired.
  6. Makes 4-1 cup servings.

My son and I enjoyed this. I had to add another can of diced tomatoes and use petite diced tomates as that is what we prefer. I also only used 1/8 cup of cilantro. We added some cheddar jack cheese to our servings. My son also added hot sauce to his serving.
