Apple Cake

  • Preheat oven to 350 degrees.
  • Core, peel, and dice apples (about 3 cups).
  • Mix together the flour, cinnamon, nutmeg, baking powder, and baking soda. Set aside.
  • In a separate mixing bowl, cream the sugar, margarine, and vanilla until fluffy (depending on the margarine you use, it might not get very fluffy, but blend at high speed for several minutes).
  • To the creamed mixture, alternately add the dry ingredients and water while mixing. Scrape the sides of the bowl and finish mixing.
  • Pour the batter into an 8" square glass baking dish.
  • Bake 40-45 minutes, or until slightly crispy around the top and edges.
  • Serve warm.

I've always loved cooking and baking, starting as a kid making barbeque sauces, cookies, and pies. My husband is allergic to eggs, milk, and soy, which adds a whole new dimension to cooking. Forget Iron Chef's secret ingredient! I love the challenge of baking and cooking without certain staples. It means a lot of trial and error, but a lot of satisfaction when a recipe works out!
