- 6 slices raisin bread, quartered (Apple Brown Betty)
- 1⁄2 cup light brown sugar, firmly packed
- 1⁄2 teaspoon cinnamon
- 1⁄4 cup butter, melted
- 6 cups coarsely chopped mcintosh apples
- 2 tablespoons lemon juice
- 1⁄2 cup granulated sugar (Hot Lemon Sauce)
- 1 1⁄2 tablespoons cornstarch
- 1 cup hot water
- 2 tablespoons butter
- 1 teaspoon grated lemon peel
- 2 tablespoons lemon juice
directions
- Preheat oven to 350* F. Generously butter a 2-quart baking dish; set aside.
- Place half the bread into blender container. Cover and blend until bread is fine crumbs. Place in a bowl. Repeat with remaining bread. Stir sugar, cinnamon and melted butter into crumbs.
- Toss chopped apples with lemon juice to coat. Place half the apples in the bottom of the prepared dish. Top with half the bread mixture. Spoon on the remaining apples. Cover dish with foil and bake 40 minutes.
- Remove foil, add remaining bread crumbs and continue baking 20 more minutes or until the apples are completely tender. (Makes 8 servings, about 250 calories each.).
- Hot Lemon Sauce: In small saucepan combine sugar and cornstarch. Gradually stir water into sugar. Cook, stirring, over low heat until thickened and clear. Add butter, lemon peel and juice. Stir until butter melts. Remove from heat. Serve warm with Apple Brown Betty. (To reheat sauce, warm over low heat.) Makes 1 1/2 cups; 30 calories per tablespoon.
