  • Dissolved baking soda in milk, then add butter, golden syrup and brown sugar and mix well.
  • Add remaining ingredients and stir until just combined.
  • Three-quarters fill well-greased muffin pans and bake 190 C for 15-20 minutes.

  1. not at all like the traditional anzacs we all love. turned out like damper. actually not too bad damper muffins. but not at all what was aimed for. javascript:void(0)
     
  2. While I adore Anzac biscuits and I love muffins, this combination didn't really work for me. I found the flavour very subtle and I also felt that the muffin really needed a filling or a frosting to jazz it up. Perhaps a streusel or crumb type topping would have enhanced the flavour.
