ingredients
- 1 tablespoon bacon drippings
- 1⁄2 small onion (diced)
- 1 bunch radish (trimmed and diced)
- salt & pepper
- 1⁄4 teaspoon dried thyme
- paprika, if desired
directions
- Saute onion in the bacon fat until soft, then add the radishes.
- Cook over medium heat until crisp outside, and soft inside,about 8 minutes.
- Add seasonings near end of cooking time. Sprinkle with paprika just before serving.

we were having breakfast for dinner and i was eyeballing the home fries i was cooking for DH and the kids. but i remembered seeing this recipe and figured i'd give it a try. i didn't have time to look it up, so i just diced the radishes like you would home fries and cooked in oil w/ salt and pepper. it was a great sub for potatoes and i really don't like raw radishes. next time i'll make it according to directions and i'll bet it'll be fantastic. BTW, used the leftovers in a fritatta, YUM!
