- 1 1⁄2 cups cottage cheese plus 3 tbsp cottage cheese
- 4 eggs
- 1 cup flour
- 1 teaspoon vanilla extract
- 1 tablespoon baking powder
- 2 tablespoons sugar
- 1⁄4 cup canola oil
directions
- Combine all ingredients in the following order--cheese, eggs, vanilla extract, sugar, baking powder, and flour. Mix in each time you add an ingredient.
- Preheat a skillet with canola oil (I used butter). Fry the cottage cheese pancakes on each side until golden brown.
- Serve with maple syrup or jam (I prefer just butter), while they are still hot and the cheese is melted inside.
