AmyZoe's Fluffy Cottage Cheese Pancakes

"These were a different texture than I'm used to, but I really liked them. They were fluffier than my usual cottage cheese pancakes. I left out the sugar and didn't miss it, and if I made them again I'd probably add a little lemon juice. I've posted the recipe exactly as written. Those are just my ideas because I prefer savory instead of sweet. However, most will probably top with syrup and like just as is. I just like some butter on top. I also used butter in my pan instead of 1/4 cup of canola oil. Recipe courtesy of momsdish.com."

directions

  • Combine all ingredients in the following order--cheese, eggs, vanilla extract, sugar, baking powder, and flour. Mix in each time you add an ingredient.
  • Preheat a skillet with canola oil (I used butter). Fry the cottage cheese pancakes on each side until golden brown.
  • Serve with maple syrup or jam (I prefer just butter), while they are still hot and the cheese is melted inside.
