Amish Friendship Bread (Lower Fat)

"I've adapted the original recipe in hopes to bring down the fat content... and maybe the calories as well. You could substitute the sugar with Splenda if desired, although I haven't tried it that way."

  • 1. Preheat oven to 325 degrees.
  • 2. Mix bread ingredients in a non-metal bowl. DO NOT use any metal implements to mix the batter.
  • 3. Grease 2 large loaf pans and dust them with 1/2 the cinnamon/sugar mixture.
  • 4. Pour the batter evenly into the pans and sprinkle with the remaining sugar/cinnamon mixture.
  • 5. Bake for 1 hour. Cool until the bread loosens from the pan, about 10 minutes.

I am married and a mother of 2, ages 7 and 8, 1 girl, 1 boy. I am a stay at home Mom, but may be entering the work force again soon. I LOVE to read, mainly romances. My favorite cookbook is my Better Homes and Gardens. It was a bridal shower gift from my MIL and the poor thing is falling apart.
