A low-sugar, allergy free alternative to powdered sugar frosting. Add almond or coconut extract for extra flavor. From Cooking Free
- 1 (12 ounce) package extra firm tofu
- 1⁄4 cup sugar
- 1 teaspoon lemon juice
- 1 teaspoon margarine
- 1 teaspoon vanilla
- 1 teaspoon butter flavor extract or 1 teaspoon vanilla extract or 1 teaspoon almond extract
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon xanthan gum
- drain tofu for at least 2 hours.
- discard liquid.
- combine all ingredients in food processor until smooth.
- use immediately.
I would not call this allergy free considering soy (tofu) and corn (xanthan gum) are in the top allergens!
