Alber's Cornbread

"This is one of the first things I remember baking as a child. My mom would let me mix it up all by myself and it was the first recipe I had memorized. I never knew where she got it until one day recently I was looking at the box of Alber's cornmeal, and lo and behold, it was on the box! Nevertheless, it's a good recipe and I still enjoy it, especially with a little butter and honey."

  • Preheat oven to 400 degrees.
  • Grease a 8x8 baking dish or a 9-inch pie plate.
  • Combine all ingredients; pour into prepared dish.
  • Bake for 25 minutes.
  • Let cool slightly before cutting.

  2. I’ve been making this cornbread since I was 12 years old and I’m still using it at 70 years old. It was the first thing I learned to cook. I’ve memorized it for years and use it every year for my cornbread dressing. However, I now have to refer back to the box for the recipe. It’s the age thing! Lol!

  3. This is also one of the first things that I learned to make, and it's a classic for good reason - sweet, soft, and delicious.

Tweaks

  1. 1/2 recipe tastes good with 1 egg; unnecessary to bother with halving the egg. I actually prefer the texture that way.. it's not as crumbly.
