Alaska Salmon and Chipotle Wrap

"My very favorite way to eat canned salmon. It is so flavorful with lime and cilantro and a hint of spicy chipotle flavor all wrapped in a flour tortilla. I found this on a card in a magazine a while back (but I can't remember where)."

  • In bowl, mix lime juice, chiles, cilantro, bell pepper, red onion, garlic, salt, and pepper. Gently stir in salmon (which has been drained and chunked) until blended.
  • In a small bowl, blend sour cream and adobo sauce. Spread 1/4 mixture over each tortilla to within 1 inch of edge. Spread 2/3 cup salmon mixture over cream cheese/sour cream. Top with 1/4 of lettuce and roll up burrito-style. Repeat for remaining tortillas.
  • For appetizers, cut each wrap into thirds (makes 12 appetizer servings).
  • As a meal, cut each wrap in half (makes 4 entree servings).
  • Serve immediately.

  1. Very good. I changed a few things, since we didn't have everything on hand: I used mayo instead of sour cream, red wine vinegar instead of lime juice and added extra chipotle because we like our food spicy. It was very good, even with the changes, and I will definitely make it again.
     
  2. Excellent! Wanted a change from egg or tuna salad sandwiches for Lenten Fridays, and wow! was this tasty. My husband, 16 YO and I absolutely loved it in our packed lunches and it stayed nice and neat, unlike some other wraps. A keeper, for sure!

I remember my mom let me bake cookies by myself for the first time when I was five. I was hooked from that time. I love to bake and cook. Trying new recipes is especially fun for me. I usually try at least two-three per week. Of course, I have a lot of favorites that we have over and over again too. One thing that I've really gotten into recently is trying to lighten up some of my favorite recipes. Homemade pizza is one of my specialties. My husband thinks my pancakes are the best.
