African Rice Balls

- 354.88 ml basmati rice, rinsed
- 709.77 ml water
directions
- In a saucepan, bring the water to a boil and add rice. Simmer for 10 minutes or until the rice is really soft and has absorbed all the water.
- With a wooden spoon, mash the rice until it sticks together. Divide the rice into four equal portions then, using a clean cloth to protect your hands, or two large serving spoons, mould each portion into a ball.

I made just 1/3 of the recipe for the 3 of us, and added some garlic pepper and parsley for flavor, plus a bit of sea salt. A quick and easy side dish for our dinner tonight. Definitely needs spicing up to be a stand-alone side dish, but would be perfect served as accompaniment with a spicy dish. Made for ZWT7-AFRICA for the Hot Pink Ladies!
