ingredients
- 4 cups fresh green beans
- 6 ounces feta cheese
- 2 plum tomatoes
- 6 green onions
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- salt and pepper, to taste
directions
- 1. Slice beans into bite-size pieces.
- 2. Microwave 6 minutes (or until cooked).
- 3. Chop tomatoes.
- 4. Dice onions.
- 4. Crumble cheese and mix with oil and lemon juice.
- 5. Toss all ingredients together.
- 6. Salt and pepper to taste.

Made for PAC Spring 2014. Very good! Had some still warm (the hot beans warm the other ingredients) as a side dish for baked fish. Also tasted it at room temperature, then again chilled. Nice all three ways! Made as written, with just a touch of salt and pepper. Simple ingredients, yet has so much flavour.
