Acorn Squash Soup With Kale

  • 4 slice bacon, diced
  • 1 medium onion, finely chopped
  • 226.79 g kale, stems removed and leaves chopped (about 8 cups)
  • 2 (680.38 g) package frozen winter squash puree, thawed

  • In a large saucepan over medium heat, cook the bacon until crisp, stirring occasionally.
  • Remove the bacon from pan with a slotted spoon and drain on paper towels.
  • Add the onion to the fat left in the pan and cook until softened, 4 to 5 minutes.
  • Add the kale to the onions in the pan and cook until wilted, 3 to 4 minutes.
  • Add the squash puree to the pan, along with 3 cups of water (more or less water to get the consistency that you want), and bring to a boil.
  • Remove from the heat as soon as soup comes to a boil and season with salt and pepper to taste.
  • Garnish with drained bacon.

I’m a 20-something writer living with my wonderful husband of four years and our headstrong basenji pup in the Southeastern part of the US. We're expecting our first baby in Feb '09. I read and craft in my down-time. You’ll never find me without a book tucked away in my bag or one of my pockets and I’ve always got some kind of craft project going on. DH is a tennis player so we spend a lot of time out on the courts. Well, he’s out on the courts; I’m on the sidelines guarding the beer!
