- 3⁄4 cup Kraft® Grated Parmesan Cheese
- 3⁄4 cup breadcrumbs
- 3 egg whites
- 3 teaspoons water
- 4 chicken breasts, sliced thinly lenght ways into 8 pieces
- 2⁄3 cup mozzarella cheese
- 1 (400 g) can crushed tomatoes
- 1 teaspoon mixed herbs
- 3 teaspoons olive oil
directions
- 1. Preheat the oven to 200°C Place crumbled Parmesan cheese on a plate or sheet of grease proof paper. Place Bread crumbs in a large flat bowl or another sheet of grease proof paper. Put eggs whites in bowl with water and beat.
- 2. Mix crushed tomatoes with the mixed herbs and set aside.
- 3. One at a time dip sliced chicken breast into Parmesan then egg white then bread crumbs.
- 4. Heat oil in a large fry pan on a moderate. If you can’t fit all the chicken in one batch do two batches. Cook chicken for 3 minutes on each side to brown crumbs.
- 5. Transfer chicken to large baking tray.
- 6. Spoon on tomato sauce and then sprinkle mozzarella cheese on top. Bake for 15 minutes or until chicken is cooked through.
- Serve with baked potatoes and vegetables.
