  • 1. Preheat the oven to 200°C Place crumbled Parmesan cheese on a plate or sheet of grease proof paper. Place Bread crumbs in a large flat bowl or another sheet of grease proof paper. Put eggs whites in bowl with water and beat.
  • 2. Mix crushed tomatoes with the mixed herbs and set aside.
  • 3. One at a time dip sliced chicken breast into Parmesan then egg white then bread crumbs.
  • 4. Heat oil in a large fry pan on a moderate. If you can’t fit all the chicken in one batch do two batches. Cook chicken for 3 minutes on each side to brown crumbs.
  • 5. Transfer chicken to large baking tray.
  • 6. Spoon on tomato sauce and then sprinkle mozzarella cheese on top. Bake for 15 minutes or until chicken is cooked through.
  • Serve with baked potatoes and vegetables.
