5 Minute Spice Cake in Microwave

"Inspired by Recipe#361967, I experimented and made up this cake for the two of us. I did try it with twice as much baking soda and baking powder, reduced them both to 1/8 as the cake touched the microwave "ceiling" and started to curve down; tasted fine but sure looked bizaar. Think it needs these ingredients to get a cake texture. I doubt that this recipe can be reduced and work out. Thank you especially to debbwl and diner524 for trying to help me improve this recipe for two."

  • Put the flour, cocoa, baking soda, baking powder, ginger, cinnamon, nutmeg, cloves and brown sugar into a 4 cup microwaveable bowl; mix well.
  • Add oil, molasses, water and egg; mix well.
  • Microwave for 3 minutes.
  • Cool slightly, and serve with ice cream, whipping cream, or raisin sauce.

  1. I have to admit I was skeptical of cake in the microwave, but this turned out great. It is a moist cake similar to the way a self-saucing pudding cake turns out (without the sauce). I made exactly as written. The spices were just right. Delicious served very warm (I only cooled about 5 minutes) with some ice cream. Like a brownie sundae! Made for Spring 2010 PAC.
     
  2. Wow!!! How quick is this cake? I made this as written, but instead of a 4 cup dish, I used to ramkins, that I buttered before pouring in the batter, then I cooked for 2 minutes on high and that worked perfectly!! The only other change I made was to use 1 1/4 teaspoons of both ginger and cinnamon. Next time I would use 1 tsp of ginger and 1 1/2 of the cinnamon, as this was quite spicy for a cake. Thanks for sharing the quick dessert recipe!!! Made for 123 Tag Game.
     
  3. This is a great cake. Even if it's bake in the microwave, the texture is great. The cake is moist. And the taste is very good. It's a bit too sweet for me. So I'll use half sugar next time. Thanks WiGal :) Made for Holiday tag
     
  4. A nice cake with a few adjustments. Made twice, the first time made as written and cooked in a 16 oz. mug. The top and middle were done and the bottom was cooked but wet (over steamed). We also thought the flavor was a little off the first time. As written the cake was only a three star. The second time increased the spice using 1/16 teaspoon of both nutmeg and cloves. Also increased the cinnamon to 1 teaspoon. Next cooked in a 4 cup bowl for three minutes. Those few changes brought this up to a four star as they greatly improved the flavor and texture. This cake is just ok eaten alone, it really dose need some whipped cream or a sauce drizzled over it.
     
  5. I read all of the reviews before starting this and used a few tips: I made it in two small ramekins instead of a single container, upped the spice a bit and topped it still warm with homemade sugar free cinnamon ice cream. What a quick and yummy treat. Thanks hon :D
