1930's Applesauce Cake (Depression Era Cake)

ingredients
- 14.79 ml butter or 14.79 ml margarine
- 118.29 ml sugar
- 118.29 ml corn syrup, dark
- 473.18 ml flour, all purpose
- 4.92 ml cinnamon, ground
- 2.46 ml nutmeg, ground
- 2.46 ml clove, ground
- 4.92 ml baking soda
- 157.80 ml applesauce (or substitute cold coffee in equal amount)
directions
- Cream together butter and sugar in a large bowl, stir in corn syrup and set aside; sift together flour, cinnamon, nutmeg and cloves.
- Dissolve the soda in applesauce;(or coffee if using) add flour mixture and applesauce mixture alternately to creamed mixture.
- Pour into greased 13X9-inch pan; bake at 350 degrees for 45 to 50 minutes or until cake tests done.

I have a lot of cookbooks; some of my other fave authors and their books are: Madhur Jaffrey (especially World Vegetarian, World of East Vegetarian Cooking and A Taste of the Far East), Faye Levy, Martha Rose Shulman (especially Mediterranean Light, Provencal Light and Mexican Light) and Paula Wolfert.
