Aunt Gin's Vegetable Soup (Crock Pot)

"My husband's great aunt make this for him all the time growing up. She used a pressure cooker and chicken legs in the original recipe but we have found we like the beef better. And since I don't own a pressure cooker, I converted it for use in the crock pot. Even the kids love this vegetable soup. Especially when I serve it with homemade whole-wheat bread (#94990). Response to reviewer: The sugar is to keep the soup from being too salty. If you are using salt-free vegetables I would agree that you need to cut back on the sugar."

  • Combine all ingredients in large crock pot.
  • Cook on low at least 8-10 hours.
  • You can use home canned or store bought vegetables. (If you use salt-free vegetables, you will need to cut back on the sugar.) I have found it best to freeze leftovers after 24 hours, if you add the onion, or the flavor really starts to get strong. If not, you can store it for several days in the refrigerator and reheat as needed. It works well to put all the ingredients in the crock pot the night before, store in the refrigerator and then cook the next day.

  1. Love this! Tweaked it a little just to add more veggies. Added 1can small sweet peas, 3 freshly pealed & sliced organic carrots, used crushed tomatoes instead of whole (my gang is not a fan of tomates... Have to sneak it in) & the last hr. I put 2 tsp of beef billion graduals & 2 cups of hot water to create more broth. My Husband who is not a fan of soup absolutely raved over this and went back for more!

  3. My husband and I loved this, but we both agree that the sugar is a little much. If I add any,I will just add a touch of it next time, not the whole amount. Great recipe and easy!
     
  4. Quick and easy. I didn't have the canned tomatoes, but I did have some fresh leftover, so I used those instead (I cut them up and measured 32 oz). Also, I used low sodium canned vegetables and leftover cooked turkey. I did use some onion. I do think (especially since I used low sodium) the onion enhanced the flavor. The one ingredient I really wasn't sure about was the sugar. The amount seemed high to me, but I added the entire amount. It turned out a little sweet for our taste, but otherwise was a great, healthy soup. I will definitely make this one again, but I will drastically cut down on the amount of sugar (maybe add a teaspoon). The sweetness was the only "complaint" I received on this, so I will definitely be making this one again and reduce the amount of sugar. Thanks for sharing your recipe!
     
  5. Wonderful! I adjusted the ingredients a bit to what I had on hand by using one 28-ounce can of tomatoes, 1 (16-ounce can corn, frozen green beans (16 ounces) and about 1 cup of beef broth (to make up the not using canned beans). Delicious soup which we will be having often. Thanks for sharing!
